- Barley, pearl - 50 grams
- Carrot, diced - 1 medium (approximately 70 grams)
- Celery, diced - 1 stalk (approximately 40 grams)
- Onion, chopped - 1 small (approximately 70 grams)
- Garlic, minced - 2 cloves
- Beef broth - 500 ml
- Bay leaf - 1
- Thyme, dried - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped onion, diced carrot, and celery. Sauté until the vegetables are softened, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the cubed beef. Brown the beef on all sides, about 5-7 minutes.
- Stir in the barley, beef broth, bay leaf, thyme, and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 40-45 minutes, or until the barley is tender and the beef is cooked through.
