- Ground beef - 250 grams
- Whole wheat tortillas - 2 large
- Red bell pepper - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Carrot - 1 medium, julienned
- Red onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
Steps
- In a bowl, combine ground beef, soy sauce, black pepper, cumin, paprika, and minced garlic. Mix well and let marinate for 10 minutes.
- Heat olive oil in a skillet over medium heat. Add the marinated beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
- Add sliced red bell pepper, zucchini, carrot, and red onion to the skillet. Stir-fry for another 5-7 minutes until the vegetables are tender.
- Remove from heat, stir in chopped cilantro and lime juice, and season with salt to taste.
- Warm the whole wheat tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Spoon the beef and vegetable mixture evenly onto each tortilla. Roll them up tightly and serve warm.
