Ingredients

  • Ground beef - 250 grams
  • Whole wheat tortillas - 2 large
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Red onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. In a bowl, combine ground beef, soy sauce, black pepper, cumin, paprika, and minced garlic. Mix well and let marinate for 10 minutes.
  2. Heat olive oil in a skillet over medium heat. Add the marinated beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
  3. Add sliced red bell pepper, zucchini, carrot, and red onion to the skillet. Stir-fry for another 5-7 minutes until the vegetables are tender.
  4. Remove from heat, stir in chopped cilantro and lime juice, and season with salt to taste.
  5. Warm the whole wheat tortillas in a dry skillet for about 30 seconds on each side until pliable.
  6. Spoon the beef and vegetable mixture evenly onto each tortilla. Roll them up tightly and serve warm.
