  • Corn tortillas - 4 pieces
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato - 1 medium, diced
  • Lettuce - 1 cup, shredded
  • Avocado - 1 small, sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red onion and minced garlic, sautéing until softened, about 3 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the cumin, paprika, salt, and black pepper. Add the diced bell pepper and zucchini, cooking for an additional 5 minutes until the vegetables are tender.
  4. Meanwhile, in a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Toast the corn tortillas for 1-2 minutes on each side until they are crispy.
  5. To assemble the tostadas, place a crispy tortilla on a plate, layer with the beef and vegetable mixture, and top with diced tomatoes, shredded lettuce, and avocado slices.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.
