- Beef sirloin - 250 grams, thinly sliced
- Quinoa - 1 cup (170 grams), rinsed
- Broccoli florets - 1 cup (90 grams)
- Red bell pepper - 1 medium (150 grams), sliced
- Carrot - 1 medium (60 grams), julienned
- Snap peas - 1 cup (100 grams)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons (30 ml)
- Sesame oil - 1 tablespoon (15 ml)
- Olive oil - 1 tablespoon (15 ml)
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water. In a medium saucepan, add the quinoa and 2 cups (480 ml) of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the quinoa is cooking, heat olive oil in a large skillet or wok over medium-high heat. Add the sliced beef, season with salt and black pepper, and stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add garlic and ginger, stirring for about 30 seconds until fragrant. Then add the broccoli, red bell pepper, carrot, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
- Return the beef to the skillet, pour in the soy sauce and sesame oil, and stir everything together for another 2 minutes to heat through and combine the flavors.
- Fluff the cooked quinoa with a fork and divide it between two plates. Top with the beef and vegetable stir-fry, garnishing with green onions and sesame seeds if desired.
