  • Beef sirloin - 200 grams, thinly sliced
  • Red bell pepper - 1 medium, sliced
  • Broccoli - 100 grams, cut into florets
  • Carrot - 1 medium, julienned
  • Sugar snap peas - 100 grams
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Couscous - 1 cup (180 grams)
  • Vegetable broth - 1 cup (240 ml)
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish (optional)

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. While the couscous is cooking, heat olive oil in a large skillet or wok over medium-high heat.
  3. Add the sliced beef to the skillet and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  4. In the same skillet, add minced garlic, grated ginger, and all the vegetables (red bell pepper, broccoli, carrot, and sugar snap peas). Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Return the beef to the skillet and add the soy sauce and sesame oil. Stir well to combine and heat through for another 2-3 minutes.
  6. Serve the beef and vegetable stir-fry over the prepared couscous. Garnish with sesame seeds if desired.
