  • Garlic, minced - 2 cloves
  • Tomato paste - 1 tablespoon
  • Beef broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1 teaspoon (to taste)
  • Black pepper - 1/2 teaspoon (to taste)
  • Long-grain rice - 100 grams
  • Water (for rice) - 200 milliliters

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until translucent, about 3-4 minutes.
  2. Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 5-7 minutes.
  3. Stir in the diced carrots, potatoes, and celery, cooking for an additional 3-4 minutes.
  4. Add the tomato paste, dried thyme, bay leaf, salt, and black pepper, mixing well to coat the vegetables and beef.
  5. Pour in the beef broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1 hour, stirring occasionally.
  6. After 1 hour, check the beef for tenderness; it should be fork-tender. If not, continue simmering for an additional 15-30 minutes.
  7. While the stew is finishing, rinse the rice under cold water. In a separate pot, bring 200 milliliters of water to a boil, add the rice, and a pinch of salt. Cover and reduce the heat to low, cooking for about 15-18 minutes until the rice is tender and water is absorbed.
  8. Once the stew is ready, remove the bay leaf and serve the beef and vegetable stew over a bed of fluffy rice.
