- Garlic, minced - 2 cloves
- Tomato paste - 1 tablespoon
- Beef broth - 500 milliliters
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon (to taste)
- Black pepper - 1/2 teaspoon (to taste)
- Long-grain rice - 100 grams
- Water (for rice) - 200 milliliters
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until translucent, about 3-4 minutes.
- Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 5-7 minutes.
- Stir in the diced carrots, potatoes, and celery, cooking for an additional 3-4 minutes.
- Add the tomato paste, dried thyme, bay leaf, salt, and black pepper, mixing well to coat the vegetables and beef.
- Pour in the beef broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1 hour, stirring occasionally.
- After 1 hour, check the beef for tenderness; it should be fork-tender. If not, continue simmering for an additional 15-30 minutes.
- While the stew is finishing, rinse the rice under cold water. In a separate pot, bring 200 milliliters of water to a boil, add the rice, and a pinch of salt. Cover and reduce the heat to low, cooking for about 15-18 minutes until the rice is tender and water is absorbed.
- Once the stew is ready, remove the bay leaf and serve the beef and vegetable stew over a bed of fluffy rice.
