- Beef chuck, diced - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Celery, diced - 1 stalk
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 small
- Potato, diced - 1 medium
- Crushed tomatoes - 200 grams
- Beef broth - 500 milliliters
- Quinoa - 50 grams
- Rice - 50 grams
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parsley, chopped - for garnish
Steps
- Heat olive oil in a large pot over medium heat.
- Add diced beef and brown on all sides, about 5-7 minutes.
- Remove beef and set aside. In the same pot, add chopped onion and cook until translucent, about 3-4 minutes.
- Stir in minced garlic, diced carrot, celery, bell pepper, zucchini, and potato. Sauté for another 5 minutes.
- Return the beef to the pot and add crushed tomatoes, beef broth, thyme, bay leaf, salt, and black pepper. Stir well.
- Bring the stew to a boil, then reduce heat to low and cover. Simmer for 40-50 minutes, or until the beef is tender.
- In a separate pot, combine quinoa and rice with 1 cup of water. Bring to a boil, then cover and reduce heat to low. Cook for 15-20 minutes until water is absorbed.
- Remove the stew from heat and discard the bay leaf. Adjust seasoning if necessary.
- Serve the stew over a bed of quinoa and rice, garnished with chopped parsley.
