  • Zucchini - 1 medium, sliced into thick rounds
  • Red onion - 1 medium, cut into wedges
  • Olive oil - 2 tablespoons
  • Soy sauce (low sodium) - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Wooden skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine olive oil, soy sauce, garlic powder, black pepper, and salt to create a marinade.
  2. Add the beef cubes to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
  3. While the beef is marinating, prepare the vegetables by cutting the bell pepper, zucchini, and red onion into the specified sizes.
