- Zucchini - 1 medium, sliced into thick rounds
- Red onion - 1 medium, cut into wedges
- Olive oil - 2 tablespoons
- Soy sauce (low sodium) - 2 tablespoons
- Garlic powder - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Wooden skewers - 4, soaked in water for 30 minutes
Steps
- In a mixing bowl, combine olive oil, soy sauce, garlic powder, black pepper, and salt to create a marinade.
- Add the beef cubes to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
- While the beef is marinating, prepare the vegetables by cutting the bell pepper, zucchini, and red onion into the specified sizes.
- After marinating, thread the beef and vegetables alternately onto the soaked skewers, leaving a little space between each piece for even cooking.
- Preheat a grill or grill pan over medium-high heat.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender.
- Remove the skewers from the grill and let them rest for a couple of minutes before serving.
