Ingredients

  • Beef sirloin - 200 grams, diced
  • Quinoa - 1/4 cup (45 grams)
  • Arborio rice - 1/2 cup (100 grams)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Bell pepper - 1/2, diced
  • Zucchini - 1 small, diced
  • Vegetable broth - 3 cups (720 ml)
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced beef and sauté until browned, about 5 minutes. Remove the beef and set aside.
  2. In the same saucepan, add another tablespoon of olive oil. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3 minutes.
  3. Stir in the diced carrot, bell pepper, and zucchini. Cook for an additional 5 minutes until the vegetables are slightly tender.
  4. Add the Arborio rice and quinoa to the vegetable mixture, stirring well to coat them in the oil and vegetables. Cook for 2-3 minutes until the rice becomes slightly translucent.
  5. Gradually add the vegetable broth, one cup at a time, stirring frequently. Allow the mixture to absorb the broth before adding more. Continue until all broth is used and the rice and quinoa are creamy and cooked, about 20 minutes.
  6. Return the beef to the pan, and season with salt and black pepper. Stir to combine and heat through for about 2-3 minutes.
  7. Remove from heat and stir in fresh parsley and Parmesan cheese, if using. Serve hot.
