Ingredients
- Beef sirloin - 200 grams, diced
- Quinoa - 1/4 cup (45 grams)
- Arborio rice - 1/2 cup (100 grams)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Bell pepper - 1/2, diced
- Zucchini - 1 small, diced
- Vegetable broth - 3 cups (720 ml)
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 2 tablespoons, grated (optional)
Steps
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced beef and sauté until browned, about 5 minutes. Remove the beef and set aside.
- In the same saucepan, add another tablespoon of olive oil. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3 minutes.
- Stir in the diced carrot, bell pepper, and zucchini. Cook for an additional 5 minutes until the vegetables are slightly tender.
- Add the Arborio rice and quinoa to the vegetable mixture, stirring well to coat them in the oil and vegetables. Cook for 2-3 minutes until the rice becomes slightly translucent.
- Gradually add the vegetable broth, one cup at a time, stirring frequently. Allow the mixture to absorb the broth before adding more. Continue until all broth is used and the rice and quinoa are creamy and cooked, about 20 minutes.
- Return the beef to the pan, and season with salt and black pepper. Stir to combine and heat through for about 2-3 minutes.
- Remove from heat and stir in fresh parsley and Parmesan cheese, if using. Serve hot.
