- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Parmesan cheese (grated) - 50 grams
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground or diced beef to the skillet, cooking until browned. Season with salt and black pepper.
- Stir in the diced carrot, zucchini, and bell pepper, cooking for about 5 minutes until vegetables are slightly softened.
- Add the Arborio rice to the skillet, stirring for 1-2 minutes until the rice is well-coated and slightly toasted.
- Pour in the vegetable broth gradually, one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle.
- Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.
- Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning if necessary.
