Ingredients

  • Beef (ground or diced) - 200 grams
  • Arborio rice - 150 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Carrot (diced) - 1 medium
  • Zucchini (diced) - 1 medium
  • Bell pepper (diced) - 1 medium
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Parmesan cheese (grated) - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the ground or diced beef to the skillet, cooking until browned. Season with salt and black pepper.
  3. Stir in the diced carrot, zucchini, and bell pepper, cooking for about 5 minutes until vegetables are slightly softened.
  4. Add the Arborio rice to the skillet, stirring for 1-2 minutes until the rice is well-coated and slightly toasted.
  5. Pour in the vegetable broth gradually, one ladle at a time, stirring frequently. Wait until most of the liquid is absorbed before adding the next ladle.
  6. Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.
  7. Stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning if necessary.
  8. Remove from heat and let sit for a minute. Serve hot, garnished with fresh parsley.
