- Beef (diced) - 200 grams

- Zucchini (diced) - 1 medium

- Garlic (minced) - 2 cloves
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Parmesan cheese (grated) - 30 grams

- Black pepper - to taste
- Fresh parsley (chopped) - 1 tablespoon
Steps
- Heat the olive oil in a large, deep skillet over medium heat. Add the diced beef and cook until browned on all sides, about 5-7 minutes.
- Remove the beef from the skillet and set aside. In the same skillet, add the chopped onion and cook until translucent, about 3 minutes.
- Add the minced garlic, diced carrot, and zucchini to the skillet. Sauté for another 5 minutes until the vegetables begin to soften.
- Stir in the Arborio rice and cook for 1-2 minutes until the rice is lightly toasted.
- Gradually add the vegetable broth, one ladle at a time, stirring frequently. Allow the liquid to absorb before adding more, continuing until the rice is creamy and al dente, about 18-20 minutes.
- Return the cooked beef to the skillet and mix well. Stir in the grated Parmesan cheese, salt, and black pepper to taste.
- Remove from heat and garnish with chopped parsley before serving.
