- Cucumber (diced) - 1 medium
- Cherry tomatoes (halved) - 100 grams
- Red onion (finely chopped) - 1/4 medium
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Rinse the quinoa under cold water and cook it according to package instructions, usually in about 15 minutes, until fluffy.
- While the quinoa is cooking, heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the ground beef to the skillet, breaking it apart with a spoon. Season with garlic powder, cumin, salt, and black pepper. Cook for about 5-7 minutes until browned and fully cooked.
