  • Bell pepper (chopped) - 1 medium
  • Zucchini (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Red onion (diced) - 1 small
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 400 milliliters

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer for about 2 minutes.
  2. In a medium saucepan, combine the rinsed quinoa and 400 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. While quinoa is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the diced red onion and minced garlic to the skillet, sautéing for 2-3 minutes until translucent.
  5. Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until browned.
  6. Stir in the cumin, paprika, salt, and black pepper, mixing well to combine.
  7. Add the chopped bell pepper, sliced zucchini, and julienned carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
  8. Once the quinoa is cooked, fluff it with a fork and divide it between two bowls.
  9. Top each bowl of quinoa with the beef and vegetable mixture.
