- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon

- Water - 400 milliliters
Steps
- Rinse the quinoa under cold water in a fine mesh strainer for about 2 minutes.

- Add the ground beef to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until browned.
- Stir in the cumin, paprika, salt, and black pepper, mixing well to combine.
- Add the chopped bell pepper, sliced zucchini, and julienned carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
- Once the quinoa is cooked, fluff it with a fork and divide it between two bowls.
- Top each bowl of quinoa with the beef and vegetable mixture.
- Drizzle with lemon juice and sprinkle with chopped parsley before serving.
