  • Ground beef - 250 grams
  • Bell pepper (mixed colors) - 1 medium, diced
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Zucchini - 1 small, diced
  • Taco seasoning - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Flour tortillas - 4 large
  • Shredded cheddar cheese - 150 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a skillet over medium heat. Add the diced red onion and garlic, sautéing until soft, about 3 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain any excess fat.
  3. Stir in the taco seasoning, diced bell pepper, and zucchini. Cook for another 5 minutes, until the vegetables are tender. Season with salt and black pepper to taste.
  4. In a separate skillet, place one tortilla and sprinkle half of the shredded cheese on one half of the tortilla.
  5. Add half of the beef and vegetable mixture over the cheese, then fold the tortilla over to create a half-moon shape. Cook for 2-3 minutes on each side until golden brown and the cheese has melted.
  6. Repeat with the second tortilla and remaining ingredients.
  7. Slice the quesadillas into wedges and serve hot with salsa or guacamole.
