Ingredients
- Basmati rice - 150 grams
- Beef, cubed - 200 grams
- Vegetable oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Green peas - 100 grams
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 300 ml
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - 2 for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the cubed beef to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced carrot, bell pepper, and green peas, and cook for an additional 3-4 minutes.
- Add the cumin, coriander, turmeric, salt, and black pepper, stirring well to coat the vegetables and beef with the spices.
- Drain the soaked rice and add it to the pot, stirring gently to combine.
- Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the pilaf with a fork before serving.
- Garnish with fresh parsley and serve with lemon wedges on the side.
