Ingredients

  • Basmati rice - 150 grams
  • Beef, cubed - 200 grams
  • Vegetable oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Green peas - 100 grams
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef broth - 300 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - 2 for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
  3. Add the cubed beef to the pot and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced carrot, bell pepper, and green peas, and cook for an additional 3-4 minutes.
  5. Add the cumin, coriander, turmeric, salt, and black pepper, stirring well to coat the vegetables and beef with the spices.
  6. Drain the soaked rice and add it to the pot, stirring gently to combine.
  7. Pour in the beef broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the pilaf with a fork before serving.
  9. Garnish with fresh parsley and serve with lemon wedges on the side.
