  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Carrot, diced - 1 medium
  • Crushed tomatoes - 200 grams
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. In a medium pot, bring 2 cups of water to a boil. Add quinoa and rice, reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
