  • Beef, ground - 200 grams
  • Quinoa, uncooked - 100 grams
  • Pasta, whole wheat - 150 grams
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Onion, chopped - 1 small
  • Garlic, minced - 2 cloves
  • Olive oil - 1 tablespoon
  • Tomato sauce - 200 grams
  • Cheddar cheese, shredded - 100 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Water - 500 milliliters

Steps

  1. Rinse the quinoa under cold water and then cook it in a pot with 200 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
  2. While the quinoa is cooking, bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  5. Stir in the diced carrot, bell pepper, and zucchini into the skillet, cooking for another 5 minutes until the vegetables are tender.
  6. Add the cooked quinoa and pasta to the skillet along with the tomato sauce, salt, black pepper, oregano, and basil. Mix everything well and cook for an additional 3-5 minutes until heated through.
  7. Remove from heat and sprinkle the shredded cheddar cheese on top. Cover the skillet for a few minutes to let the cheese melt.
