- Quinoa, uncooked - 100 grams
- Pasta, whole wheat - 150 grams
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 medium
- Onion, chopped - 1 small
- Garlic, minced - 2 cloves
- Olive oil - 1 tablespoon
- Tomato sauce - 200 grams
- Cheddar cheese, shredded - 100 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Water - 500 milliliters
Steps
- Rinse the quinoa under cold water and then cook it in a pot with 200 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
- While the quinoa is cooking, bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced carrot, bell pepper, and zucchini into the skillet, cooking for another 5 minutes until the vegetables are tender.
- Add the cooked quinoa and pasta to the skillet along with the tomato sauce, salt, black pepper, oregano, and basil. Mix everything well and cook for an additional 3-5 minutes until heated through.
