Ingredients

  • Ground beef - 250 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 pieces
  • Enchilada sauce - 200 milliliters
  • Shredded cheese (cheddar or mozzarella) - 100 grams
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  4. Stir in the diced bell pepper, zucchini, minced garlic, cumin, chili powder, salt, and black pepper. Cook for another 5-7 minutes until the vegetables are tender.
  5. In a separate bowl, spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Warm the corn tortillas slightly in a dry skillet or microwave to make them pliable.
  7. Spoon some of the beef and vegetable mixture onto each tortilla, roll them up tightly, and place seam-side down in the baking dish.
  8. Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  9. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
