Ingredients

  • Ground beef - 250 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Bell pepper - 1 small, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Diced tomatoes - 200 grams (canned or fresh)
  • Olive oil - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Breadcrumbs - 2 tablespoons (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced carrots, zucchini, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
  5. Add the diced tomatoes, oregano, basil, salt, and black pepper. Stir well and let the mixture simmer for 10 minutes to blend the flavors.
  6. Transfer the beef and vegetable mixture into a greased baking dish. Spread it evenly.
  7. Sprinkle the shredded cheddar cheese and grated Parmesan cheese over the top. If using, sprinkle the breadcrumbs for added crunch.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool for a few minutes before serving.
