Ingredients

  • Beef stew meat - 250 grams
  • Basmati rice - 1 cup (200 grams)
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Beef broth - 2 cups (500 ml)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced carrot, and green bell pepper, and cook for another 3-5 minutes until softened.
  3. Increase the heat to medium-high and add the beef stew meat. Season with salt, black pepper, cumin, coriander, and paprika. Cook until the meat is browned on all sides, about 5-7 minutes.
  4. Stir in the basmati rice, ensuring it is well coated with the spices and oil.
  5. Pour in the beef broth, bring to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  7. Garnish with fresh parsley before serving.
