- Long-grain rice - 100 grams
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato sauce - 200 grams
- Beef broth - 250 ml
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 50 grams, grated
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.
- Stir in the diced bell pepper, cumin, paprika, salt, and black pepper. Cook for another 3 minutes until the bell pepper softens.
- Add the long-grain rice to the skillet, followed by the tomato sauce and beef broth. Bring to a simmer and let it cook for 2-3 minutes.
- Transfer the mixture to a baking dish, covering it with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil, sprinkle the grated cheddar cheese on top, and return to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh parsley, and serve hot.
