Ingredients

  • Beef chuck, cut into 2.5 cm cubes - 300 grams
  • Potatoes, peeled and diced - 300 grams
  • Carrots, sliced - 100 grams
  • Onion, chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Beef broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Bay leaf - 1
  • Parsley, chopped (for garnish) - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Add the sliced carrots and diced potatoes to the pot, stirring to combine with the onion and garlic.
  4. Return the browned beef to the pot. Pour in the beef broth and add salt, pepper, thyme, and the bay leaf.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, or until the beef is tender and the flavors meld together.
  6. Remove the bay leaf before serving. Garnish with chopped parsley and serve hot.
