- Beef chuck, cut into 2.5 cm cubes - 300 grams
- Potatoes, peeled and diced - 300 grams
- Carrots, sliced - 100 grams
- Onion, chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Beef broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Bay leaf - 1
- Parsley, chopped (for garnish) - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
- Add the sliced carrots and diced potatoes to the pot, stirring to combine with the onion and garlic.
- Return the browned beef to the pot. Pour in the beef broth and add salt, pepper, thyme, and the bay leaf.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, or until the beef is tender and the flavors meld together.
- Remove the bay leaf before serving. Garnish with chopped parsley and serve hot.
