Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the potatoes, then boil them in salted water for about 15 minutes until fork-tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced carrot, salt, black pepper, paprika, and thyme. Cook for another 3-4 minutes.
- Pour in the beef broth and Worcestershire sauce, stirring to combine. Let the mixture simmer for 5 minutes until slightly thickened. Remove from heat.
- In a large bowl, combine the cooked potatoes with the beef mixture, mashing lightly to mix.
- Roll out the puff pastry on a lightly floured surface. Cut it into two circles that are slightly larger than your pie dishes.
- Place the beef and potato mixture into each pie dish and cover with a pastry circle, sealing the edges by crimping with a fork.
- Brush the tops with the beaten egg to achieve a golden color while baking.
