Ingredients

  • Beef chuck, diced - 300 grams
  • Mushrooms, sliced - 150 grams
  • Onion, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 small
  • Beef broth - 500 ml
  • Olive oil - 2 tablespoons
  • Thyme, dried - 1 teaspoon
  • Rosemary, dried - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaf - 1
  • Parsley, chopped - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add the diced beef and brown on all sides, about 5-7 minutes.
  2. Remove the beef from the pot and set aside. In the same pot, add the chopped onion, minced garlic, and diced carrot. Sauté for 4-5 minutes until softened.
  3. Add the sliced mushrooms to the pot and cook for another 5 minutes, until they begin to release their moisture.
  4. Return the browned beef to the pot and pour in the beef broth. Stir in the dried thyme, rosemary, salt, pepper, and bay leaf.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 60 minutes, stirring occasionally.
  6. After 60 minutes, check the beef for tenderness. If it's not tender, continue to simmer for an additional 15-30 minutes.
  7. Once done, remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
