- Beef chuck, diced - 300 grams
- Mushrooms, sliced - 150 grams
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 small
- Beef broth - 500 ml
- Olive oil - 2 tablespoons
- Thyme, dried - 1 teaspoon
- Rosemary, dried - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Parsley, chopped - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the diced beef and brown on all sides, about 5-7 minutes.
- Remove the beef from the pot and set aside. In the same pot, add the chopped onion, minced garlic, and diced carrot. Sauté for 4-5 minutes until softened.
- Add the sliced mushrooms to the pot and cook for another 5 minutes, until they begin to release their moisture.
- Return the browned beef to the pot and pour in the beef broth. Stir in the dried thyme, rosemary, salt, pepper, and bay leaf.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 60 minutes, stirring occasionally.
- After 60 minutes, check the beef for tenderness. If it's not tender, continue to simmer for an additional 15-30 minutes.
- Once done, remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
