- Brown lentils - 100 grams, rinsed
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Yellow onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Beef broth - 500 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5 minutes until the vegetables are soft.
- Add the beef cubes to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in the ground cumin, paprika, salt, and black pepper, and cook for an additional minute to release the spices' flavors.
- Add the canned diced tomatoes, beef broth, lentils, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the beef is tender and lentils are cooked through.
