  • Shredded cheddar cheese - 150 grams
  • Flour tortillas - 4 (8-inch size)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (optional)
  • Sour cream - for serving (optional)
  • Salsa - for serving (optional)

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in cumin, paprika, salt, and pepper. Cook for another 2 minutes, allowing the spices to blend with the meat. Remove from heat.
  5. Lay out two flour tortillas on a clean surface. Evenly distribute half of the beef mixture on one half of each tortilla, then sprinkle half of the shredded cheddar cheese over the beef.
  6. Fold the tortillas over to create a half-moon shape, pressing down gently to seal.
  7. In the same skillet, reduce the heat to medium and place the quesadillas in the skillet. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  8. Remove from skillet and let cool for a minute before cutting into wedges. Serve with sour cream and salsa on the side.
