- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (optional)

Steps
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent.
- Add minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in cumin, paprika, salt, and pepper. Cook for another 2 minutes, allowing the spices to blend with the meat. Remove from heat.
- Lay out two flour tortillas on a clean surface. Evenly distribute half of the beef mixture on one half of each tortilla, then sprinkle half of the shredded cheddar cheese over the beef.
- Fold the tortillas over to create a half-moon shape, pressing down gently to seal.
- In the same skillet, reduce the heat to medium and place the quesadillas in the skillet. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from skillet and let cool for a minute before cutting into wedges. Serve with sour cream and salsa on the side.
