Ingredients

  • Ground halal beef - 250 grams
  • Shredded cheddar cheese - 150 grams
  • Tortillas (flour) - 4 large
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Bell pepper (diced) - 1 medium
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sour cream - for serving
  • Salsa - for serving

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 2-3 minutes until softened.
  2. Add the ground halal beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the diced bell pepper, cumin, chili powder, salt, and black pepper. Cook for an additional 3-4 minutes until the bell pepper is tender.
  4. Remove the beef mixture from heat and set aside.
  5. In the same skillet, place one tortilla over medium heat. Sprinkle half of the shredded cheddar cheese over the tortilla, then add half of the beef mixture on top of the cheese.
  6. Sprinkle the remaining cheddar cheese over the beef mixture, and top with another tortilla.
  7. Cook for about 3-4 minutes on one side until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla and cook for another 3-4 minutes until the second side is golden and the cheese is melted.
  8. Remove the quesadilla from the skillet and let it rest for a minute before cutting it into wedges.
  9. Repeat the process with the remaining tortillas and beef mixture.
  10. Serve warm with sour cream and salsa on the side.
