- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 large
- Enchilada sauce - 200 milliliters
- Shredded cheddar cheese - 150 grams
- Fresh cilantro, chopped - 2 tablespoons (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet over medium heat, cook the diced onion until translucent, about 3-4 minutes.
- Add the minced garlic and ground beef to the skillet, breaking the beef apart as it cooks. Cook until the beef is browned and cooked through, about 5-7 minutes.
- Stir in the cumin, chili powder, salt, and black pepper, mixing well to combine the spices with the beef. Remove from heat.
- In a separate pot, heat the enchilada sauce until warm.
- Take a corn tortilla and spoon about 2-3 tablespoons of the beef mixture into the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
- Once all the tortillas are in the baking dish, pour the warm enchilada sauce over the top, ensuring all tortillas are covered.
- Sprinkle the shredded cheddar cheese evenly over the sauce.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
