  • Ground beef - 250 grams
  • Onion, diced - 1 small (about 100 grams)
  • Garlic, minced - 2 cloves
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 large
  • Enchilada sauce - 200 milliliters
  • Shredded cheddar cheese - 150 grams
  • Fresh cilantro, chopped - 2 tablespoons (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet over medium heat, cook the diced onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and ground beef to the skillet, breaking the beef apart as it cooks. Cook until the beef is browned and cooked through, about 5-7 minutes.
  4. Stir in the cumin, chili powder, salt, and black pepper, mixing well to combine the spices with the beef. Remove from heat.
  5. In a separate pot, heat the enchilada sauce until warm.
  6. Take a corn tortilla and spoon about 2-3 tablespoons of the beef mixture into the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
  7. Once all the tortillas are in the baking dish, pour the warm enchilada sauce over the top, ensuring all tortillas are covered.
  8. Sprinkle the shredded cheddar cheese evenly over the sauce.
  9. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
