Ingredients

  • Ground beef - 250 grams
  • Onion, finely chopped - 1 medium (about 150 grams)
  • Garlic, minced - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese, shredded - 100 grams
  • Cilantro, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Empanada dough discs - 4 (store-bought or homemade)
  • Egg, beaten (for egg wash) - 1 large

Steps

  1. In a skillet, heat olive oil over medium heat, then add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
  4. Stir in cumin, paprika, salt, and black pepper; cook for another 2 minutes to combine flavors.
  5. Remove from heat and mix in shredded cheddar cheese and chopped cilantro. Let the filling cool slightly.
  6. Preheat the oven to 200°C (400°F).
  7. On a clean surface, place the empanada dough discs and spoon about 2 tablespoons of the beef mixture into the center of each disc.
  8. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
  9. Brush the tops of the empanadas with beaten egg for a golden finish.
  10. Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
