- Cheddar cheese, shredded - 100 grams
- Cilantro, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Empanada dough discs - 4 (store-bought or homemade)
- Egg, beaten (for egg wash) - 1 large
Steps
- In a skillet, heat olive oil over medium heat, then add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for an additional 1 minute until fragrant.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes.
- Stir in cumin, paprika, salt, and black pepper; cook for another 2 minutes to combine flavors.
- Remove from heat and mix in shredded cheddar cheese and chopped cilantro. Let the filling cool slightly.
- Preheat the oven to 200°C (400°F).
- On a clean surface, place the empanada dough discs and spoon about 2 tablespoons of the beef mixture into the center of each disc.
- Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal.
- Brush the tops of the empanadas with beaten egg for a golden finish.
- Place the empanadas on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.
