- Ground beef - 250 grams
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Canned diced tomatoes - 200 grams
- Cheddar cheese - 100 grams, shredded
- Italian seasoning - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cauliflower rice - 150 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, cooking until softened, about 3-4 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the diced red and green bell peppers, canned diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 5 minutes until the peppers start to soften.
- In a separate pot, lightly steam the cauliflower rice for about 3-5 minutes until tender, then stir it into the beef mixture.
- Transfer the mixture to a baking dish and spread evenly. Top with shredded cheddar cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
