Ingredients

  • Ground beef - 250 grams
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Canned diced tomatoes - 200 grams
  • Cheddar cheese - 100 grams, shredded
  • Italian seasoning - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cauliflower rice - 150 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, cooking until softened, about 3-4 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the diced red and green bell peppers, canned diced tomatoes, Italian seasoning, salt, and black pepper. Cook for another 5 minutes until the peppers start to soften.
  5. In a separate pot, lightly steam the cauliflower rice for about 3-5 minutes until tender, then stir it into the beef mixture.
  6. Transfer the mixture to a baking dish and spread evenly. Top with shredded cheddar cheese.
  7. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.
