  • Beef chuck, cubed - 300 grams
  • Pearl barley - 60 grams
  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Onion, chopped - 1 small
  • Garlic, minced - 2 cloves
  • Beef broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the cubed beef and brown on all sides, about 5-7 minutes.
  3. Remove the beef from the pot and set aside. In the same pot, add the onion, carrot, and celery, and sauté for 5 minutes until softened.
  4. Stir in the garlic and cook for an additional minute until fragrant.
  5. Return the beef to the pot, then add the pearl barley, beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for about 1.5 hours, stirring occasionally, until the beef is tender and the barley is cooked.
  8. Remove the bay leaf, adjust seasoning if necessary, and stir in the chopped parsley before serving.
