- Pearl barley - 60 grams
- Carrot, diced - 1 medium
- Celery, diced - 1 stalk
- Onion, chopped - 1 small
- Garlic, minced - 2 cloves
- Beef broth - 500 milliliters
- Tomato paste - 1 tablespoon
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 1 tablespoon
Steps
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the cubed beef and brown on all sides, about 5-7 minutes.
- Remove the beef from the pot and set aside. In the same pot, add the onion, carrot, and celery, and sauté for 5 minutes until softened.
- Stir in the garlic and cook for an additional minute until fragrant.
- Return the beef to the pot, then add the pearl barley, beef broth, tomato paste, thyme, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for about 1.5 hours, stirring occasionally, until the beef is tender and the barley is cooked.
- Remove the bay leaf, adjust seasoning if necessary, and stir in the chopped parsley before serving.
