- Beef stew meat - 300 grams
- Pearl barley - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Beef broth - 1 liter
- Water - 500 milliliters
- Olive oil - 1 tablespoon
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until softened, about 5-7 minutes.
- Add minced garlic and sauté for another minute until fragrant.
- Increase heat to medium-high and add the beef stew meat. Brown the meat on all sides, about 5-7 minutes.
- Stir in the pearl barley, beef broth, water, bay leaf, thyme, salt, and black pepper. Bring to a boil.
- Once boiling, reduce heat to low and cover. Let the soup simmer for about 60 minutes, stirring occasionally.
- After 60 minutes, check the beef for tenderness. If necessary, simmer for an additional 15-30 minutes until the beef is tender and the barley is cooked.
- Remove the bay leaf, adjust seasoning if needed, and serve hot.
