Ingredients

  • Beef stew meat - 300 grams
  • Pearl barley - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Beef broth - 1 liter
  • Water - 500 milliliters
  • Olive oil - 1 tablespoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté until softened, about 5-7 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Increase heat to medium-high and add the beef stew meat. Brown the meat on all sides, about 5-7 minutes.
  4. Stir in the pearl barley, beef broth, water, bay leaf, thyme, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce heat to low and cover. Let the soup simmer for about 60 minutes, stirring occasionally.
  6. After 60 minutes, check the beef for tenderness. If necessary, simmer for an additional 15-30 minutes until the beef is tender and the barley is cooked.
  7. Remove the bay leaf, adjust seasoning if needed, and serve hot.
