- Bone broth (beef or chicken) - 500 ml
- Coconut milk - 100 ml
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, melt the bear fat over medium heat until it is fully liquefied.
- Add the finely chopped shallots and sauté for about 3-4 minutes until they are translucent.
- Stir in the minced garlic and sliced wild mushrooms, cooking for another 5-7 minutes until the mushrooms are tender and have released their moisture.
- Pour in the bone broth and bring the mixture to a simmer. Allow it to cook for 10 minutes.
- Add the coconut milk and chopped thyme, stirring to combine. Simmer for an additional 5 minutes.
- Season the bisque with salt, black pepper, and lemon juice to taste.
- Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender in batches and blend until smooth.
