  • Canned kidney beans - 1 cup (240g), drained and rinsed
  • Cherry tomatoes - 1 cup (150g), halved
  • Cucumber - 1 medium (200g), diced
  • Red bell pepper - 1 medium (150g), diced
  • Red onion - 1/4 medium (50g), finely chopped
  • Fresh cilantro - 1/4 cup (15g), chopped
  • Olive oil - 2 tablespoons (30ml)
  • Lime juice - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon (3g), or to taste
  • Black pepper - 1/4 teaspoon (1g), or to taste

Steps

  1. In a large mixing bowl, combine the black beans, kidney beans, cherry tomatoes, cucumber, red bell pepper, and red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper to create the dressing.
