Ingredients

  • 2 medium zucchini
  • 200 grams ground beef or turkey
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/2 cup sugar-free BBQ sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Slice the zucchini in half lengthwise and scoop out the center to create boats. Lightly brush the zucchini with olive oil and place them cut side up on a baking sheet.
  3. In a skillet over medium heat, add the remaining olive oil and sauté the diced onion and bell pepper until softened, about 3-4 minutes.
  4. Add the ground beef or turkey to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
