- 2 medium zucchini
- 200 grams ground beef or turkey
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- 1/2 cup sugar-free BBQ sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1/2 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Fresh parsley - for garnish
Steps
- Preheat your oven to 190°C (375°F).
- Slice the zucchini in half lengthwise and scoop out the center to create boats. Lightly brush the zucchini with olive oil and place them cut side up on a baking sheet.
- In a skillet over medium heat, add the remaining olive oil and sauté the diced onion and bell pepper until softened, about 3-4 minutes.
- Add the ground beef or turkey to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the garlic powder, smoked paprika, salt, pepper, and sugar-free BBQ sauce. Cook for another 2-3 minutes until heated through.
- Scoop the meat mixture into the zucchini boats evenly, then sprinkle shredded cheddar cheese on top.
- Bake the stuffed zucchini boats in the preheated oven for 15-20 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
