- Watermelon - 500 grams (1/4 of a medium watermelon)
- Olive oil - 1 tablespoon
- Brown sugar - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh mint - for garnish (optional)
Steps
- Preheat the grill to medium-high heat.
- Cut the watermelon into thick slices, about 2.5 cm (1 inch) thick, and set aside.
- In a small bowl, whisk together the olive oil, brown sugar, soy sauce, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper to create the BBQ glaze.
- Brush one side of each watermelon slice generously with the BBQ glaze.
- Place the watermelon slices on the grill, glazed side down, and grill for about 4-5 minutes until grill marks appear.
- While grilling, brush the top side of the watermelon with more BBQ glaze.
- Flip the watermelon slices and grill for an additional 4-5 minutes until heated through and caramelized.
- Remove from the grill and let cool for a minute.
- Serve the BBQ watermelon garnished with fresh mint if desired.
