Ingredients

  • Watermelon - 500 grams (1/4 of a medium watermelon)
  • Olive oil - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Soy sauce (gluten-free) - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh mint - for garnish (optional)

Steps

  1. Preheat the grill to medium-high heat.
  2. Cut the watermelon into thick slices, about 2.5 cm (1 inch) thick, and set aside.
  3. In a small bowl, whisk together the olive oil, brown sugar, soy sauce, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper to create the BBQ glaze.
  4. Brush one side of each watermelon slice generously with the BBQ glaze.
  5. Place the watermelon slices on the grill, glazed side down, and grill for about 4-5 minutes until grill marks appear.
  6. While grilling, brush the top side of the watermelon with more BBQ glaze.
  7. Flip the watermelon slices and grill for an additional 4-5 minutes until heated through and caramelized.
  8. Remove from the grill and let cool for a minute.
  9. Serve the BBQ watermelon garnished with fresh mint if desired.
