Ingredients

  • cooked black beans - 1 cup
  • cooked quinoa - 1/2 cup
  • grated carrot - 1/2 cup
  • chopped red bell pepper - 1/2 cup
  • chopped onion - 1/4 cup
  • minced garlic - 2 cloves
  • ground cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • egg - 1 large
  • breadcrumbs - 1/4 cup
  • BBQ sauce - 4 tablespoons
  • olive oil - 2 tablespoons
  • burger buns - 2
  • lettuce leaves - 2

Steps

  1. In a large bowl, mash the cooked black beans with a fork until slightly chunky.
  2. Add the cooked quinoa, grated carrot, chopped red bell pepper, chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the bowl and mix well.
  3. Stir in the egg and breadcrumbs until fully combined.
  4. Form the mixture into two patties.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  6. Cook the patties for 5-6 minutes on each side, or until they are golden brown and heated through.
  7. Meanwhile, toast the burger buns on a separate skillet or grill until lightly browned.
  8. Assemble the burgers by placing a patty on each bun, adding 2 tablespoons of BBQ sauce and a lettuce leaf.
