- cooked black beans - 1 cup
- cooked quinoa - 1/2 cup
- grated carrot - 1/2 cup
- chopped red bell pepper - 1/2 cup
- chopped onion - 1/4 cup
- minced garlic - 2 cloves
- ground cumin - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- egg - 1 large
- breadcrumbs - 1/4 cup
- BBQ sauce - 4 tablespoons
- olive oil - 2 tablespoons
- burger buns - 2
- lettuce leaves - 2
Steps
- In a large bowl, mash the cooked black beans with a fork until slightly chunky.
- Add the cooked quinoa, grated carrot, chopped red bell pepper, chopped onion, minced garlic, ground cumin, smoked paprika, salt, and black pepper to the bowl and mix well.
- Stir in the egg and breadcrumbs until fully combined.
- Form the mixture into two patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Cook the patties for 5-6 minutes on each side, or until they are golden brown and heated through.
- Meanwhile, toast the burger buns on a separate skillet or grill until lightly browned.
- Assemble the burgers by placing a patty on each bun, adding 2 tablespoons of BBQ sauce and a lettuce leaf.
