Ingredients

  • cooked black beans - 200 grams
  • quinoa - 50 grams
  • red bell pepper - 1 medium, diced
  • red onion - 1 small, finely chopped
  • garlic - 1 clove, minced
  • ground cumin - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon
  • egg - 1 large
  • gluten-free breadcrumbs - 50 grams
  • olive oil - 2 tablespoons
  • BBQ sauce - 4 tablespoons
  • lettuce leaves - 2
  • sliced tomato - 1 medium
  • sliced pickles - 4

Steps

  1. In a small pot, cook quinoa according to package instructions, usually about 15 minutes.
  2. In a large mixing bowl, mash the cooked black beans until mostly smooth.
  3. Add the cooked quinoa, diced red bell pepper, chopped red onion, minced garlic, ground cumin, smoked paprika, salt, pepper, and egg to the bowl. Mix until well combined.
  4. Gradually add the gluten-free breadcrumbs to the mixture until it holds together when formed into patties.
  5. Shape the mixture into two patties.
  6. Heat olive oil in a skillet over medium heat, and cook the patties for about 4-5 minutes on each side or until they are golden brown and heated through.
  7. During the last minute of cooking, brush each patty with BBQ sauce and cover the skillet to allow the sauce to caramelize slightly.
  8. Assemble the burgers by placing each patty on a lettuce leaf, topping with sliced tomato and pickles. Drizzle additional BBQ sauce if desired.
