- cooked black beans - 200 grams
- quinoa - 50 grams
- red bell pepper - 1 medium, diced
- red onion - 1 small, finely chopped
- garlic - 1 clove, minced
- ground cumin - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
- egg - 1 large
- gluten-free breadcrumbs - 50 grams
- olive oil - 2 tablespoons
- BBQ sauce - 4 tablespoons
- lettuce leaves - 2
- sliced tomato - 1 medium
- sliced pickles - 4
Steps
- In a small pot, cook quinoa according to package instructions, usually about 15 minutes.
- In a large mixing bowl, mash the cooked black beans until mostly smooth.
- Add the cooked quinoa, diced red bell pepper, chopped red onion, minced garlic, ground cumin, smoked paprika, salt, pepper, and egg to the bowl. Mix until well combined.
- Gradually add the gluten-free breadcrumbs to the mixture until it holds together when formed into patties.
- Shape the mixture into two patties.
- Heat olive oil in a skillet over medium heat, and cook the patties for about 4-5 minutes on each side or until they are golden brown and heated through.
- During the last minute of cooking, brush each patty with BBQ sauce and cover the skillet to allow the sauce to caramelize slightly.
- Assemble the burgers by placing each patty on a lettuce leaf, topping with sliced tomato and pickles. Drizzle additional BBQ sauce if desired.
