Ingredients

  • Acorn squash - 1 medium (about 450g)
  • Cooked quinoa - 1 cup (about 170g)
  • Black beans - 1/2 cup (about 120g), rinsed and drained
  • Corn kernels - 1/2 cup (about 75g), fresh or frozen
  • BBQ sauce - 1/4 cup (about 60ml)
  • Red onion - 1/4 cup (about 40g), diced
  • Cilantro - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon (about 15ml)
  • Salt - 1/2 teaspoon (about 2.5g)
  • Black pepper - 1/4 teaspoon (about 1.5g)
  • Cheddar cheese - 1/2 cup (about 60g), shredded (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the acorn squash in half lengthwise and scoop out the seeds.
  3. Brush the insides of the squash halves with olive oil and season with salt and black pepper.
  4. Place the squash halves cut side down on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  5. While the squash is roasting, prepare the filling. In a bowl, combine cooked quinoa, black beans, corn, diced red onion, BBQ sauce, and chopped cilantro. Mix well.
  6. Once the squash is tender, remove it from the oven and flip the halves cut side up.
  7. Fill each squash half with the BBQ filling, pressing down gently to pack it in.
  8. If using, sprinkle shredded cheddar cheese on top of the stuffed squash.
  9. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes before serving.
