Ingredients
- Seitan - 200 grams
- BBQ sauce - 100 ml
- Whole wheat burger buns - 2 pieces
- Olive oil - 1 tablespoon
- Red cabbage - 100 grams, shredded
- Carrot - 1 medium, grated
- Vegan mayonnaise - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a medium bowl, mix the shredded red cabbage, grated carrot, vegan mayonnaise, apple cider vinegar, salt, and black pepper to create the coleslaw. Set aside.
- Heat the olive oil in a pan over medium heat. Slice the seitan into thin strips and add to the pan, cooking for about 5 minutes until slightly browned.
- Pour the BBQ sauce over the seitan and stir to coat evenly. Cook for an additional 5-7 minutes, allowing the sauce to thicken and caramelize slightly.
- While the seitan is cooking, toast the whole wheat burger buns in a separate pan or under a broiler until golden brown.
- To assemble the sandwich, place a generous amount of the BBQ seitan on the bottom half of each toasted bun, then top with a scoop of coleslaw. Add the top bun and serve immediately.
