  • Black beans - 1 can (400g), drained and rinsed
  • Corn - 1 cup (frozen or fresh)
  • Red bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • BBQ sauce - 1/2 cup (dairy-free)
  • Olive oil - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the broth is absorbed.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced red onion and red bell pepper, sauté for 5-7 minutes until soft.
