- Red bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- BBQ sauce - 1/2 cup (dairy-free)
- Olive oil - 1 tablespoon
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - to taste

Steps
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the broth is absorbed.
