  • Pork shoulder - 500 grams
  • BBQ sauce (sugar-free) - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves (Butter or Romaine) - 6 leaves
  • Coleslaw mix (cabbage and carrots) - 100 grams
  • Apple cider vinegar - 1 tablespoon
  • Fresh cilantro (optional) - for garnish

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Rub the spice mixture all over the pork shoulder.
  4. Heat olive oil in a large, oven-safe pot over medium-high heat, then sear the pork shoulder on all sides until browned, about 5-7 minutes.
  5. Cover the pot with a lid or foil and place it in the oven. Cook for 3 hours, or until the pork is tender and easily shreds with a fork.
  6. Remove the pork from the oven and shred it using two forks. Mix in the BBQ sauce until well combined.
  7. In a bowl, combine the coleslaw mix with apple cider vinegar to taste.
  8. To serve, place a generous amount of pulled pork into each lettuce leaf, top with coleslaw, and garnish with fresh cilantro if desired.
