- BBQ sauce (sugar-free) - 100 ml
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lettuce leaves (Butter or Romaine) - 6 leaves
- Coleslaw mix (cabbage and carrots) - 100 grams
- Apple cider vinegar - 1 tablespoon
- Fresh cilantro (optional) - for garnish
Steps
- Preheat your oven to 150°C (300°F).
- In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Rub the spice mixture all over the pork shoulder.
- Heat olive oil in a large, oven-safe pot over medium-high heat, then sear the pork shoulder on all sides until browned, about 5-7 minutes.
- Cover the pot with a lid or foil and place it in the oven. Cook for 3 hours, or until the pork is tender and easily shreds with a fork.
- Remove the pork from the oven and shred it using two forks. Mix in the BBQ sauce until well combined.
- In a bowl, combine the coleslaw mix with apple cider vinegar to taste.
- To serve, place a generous amount of pulled pork into each lettuce leaf, top with coleslaw, and garnish with fresh cilantro if desired.
