Ingredients

  • pork shoulder - 500 grams
  • gluten-free barbecue sauce - 100 grams
  • yellow onion - 1 medium, sliced
  • garlic - 2 cloves, minced
  • apple cider vinegar - 2 tablespoons
  • smoked paprika - 1 teaspoon
  • cumin - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • gluten-free hamburger buns - 2
  • coleslaw mix - 100 grams
  • mayonnaise - 2 tablespoons
  • apple cider vinegar (for coleslaw) - 1 tablespoon
  • salt (for coleslaw) - to taste

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a large bowl, mix the smoked paprika, cumin, salt, and black pepper. Rub this spice mixture all over the pork shoulder.
  3. Place the pork in a roasting pan and add the sliced onion and minced garlic around it.
  4. Drizzle the apple cider vinegar over the pork and cover the pan with aluminum foil.
  5. Roast the pork in the preheated oven for approximately 2 hours, or until it is tender and easily shredded with a fork.
  6. Once the pork is done, remove it from the oven and let it rest for 10 minutes before shredding it using two forks.
  7. Mix the shredded pork with the gluten-free barbecue sauce until well coated.
  8. In a separate bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, and salt. Toss until everything is well mixed.
  9. To assemble the burgers, place a generous amount of the pulled pork on the bottom half of each gluten-free hamburger bun, top with coleslaw, and cover with the top half of the bun.
