- pork shoulder - 500 grams
- gluten-free barbecue sauce - 100 grams
- yellow onion - 1 medium, sliced
- garlic - 2 cloves, minced
- apple cider vinegar - 2 tablespoons
- smoked paprika - 1 teaspoon
- cumin - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- gluten-free hamburger buns - 2
- coleslaw mix - 100 grams
- mayonnaise - 2 tablespoons
- apple cider vinegar (for coleslaw) - 1 tablespoon
- salt (for coleslaw) - to taste
Steps
- Preheat your oven to 150°C (300°F).
- In a large bowl, mix the smoked paprika, cumin, salt, and black pepper. Rub this spice mixture all over the pork shoulder.
- Place the pork in a roasting pan and add the sliced onion and minced garlic around it.
- Drizzle the apple cider vinegar over the pork and cover the pan with aluminum foil.
- Roast the pork in the preheated oven for approximately 2 hours, or until it is tender and easily shredded with a fork.
- Once the pork is done, remove it from the oven and let it rest for 10 minutes before shredding it using two forks.
- Mix the shredded pork with the gluten-free barbecue sauce until well coated.
- In a separate bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, and salt. Toss until everything is well mixed.
- To assemble the burgers, place a generous amount of the pulled pork on the bottom half of each gluten-free hamburger bun, top with coleslaw, and cover with the top half of the bun.
