Ingredients

  • Young green jackfruit in brine - 400 grams (drained and rinsed)
  • Olive oil - 1 tablespoon
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 1/2 cup
  • Slider buns - 4 pieces
  • Coleslaw mix - 1 cup
  • Vegan mayonnaise - 2 tablespoons
  • Apple cider vinegar - 1 teaspoon

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, smoked paprika, ground cumin, salt, and black pepper to the skillet. Cook for another minute until fragrant.
  3. Add the drained jackfruit to the skillet and use a fork to shred it into smaller pieces, mixing it with the spices.
  4. Pour in the BBQ sauce and stir well to coat the jackfruit. Let it simmer for about 15 minutes on low heat, stirring occasionally.
  5. While the jackfruit is cooking, prepare the coleslaw by mixing the coleslaw mix with vegan mayonnaise and apple cider vinegar in a bowl. Set aside.
  6. Once the jackfruit is heated through and slightly caramelized, remove it from heat.
  7. Assemble the sliders by placing a generous portion of BBQ pulled jackfruit on each slider bun, followed by a scoop of coleslaw.
  8. Serve immediately and enjoy your BBQ Pulled Jackfruit Sliders!
