- young green jackfruit in brine - 400 grams, drained and rinsed
- olive oil - 1 tablespoon
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- smoked paprika - 1 teaspoon
- ground cumin - 1 teaspoon
- black pepper - 1/2 teaspoon
- BBQ sauce - 1/2 cup
- water - 100 milliliters
- salt - to taste
- burger buns - 2
- coleslaw mix - 1 cup
- vegan mayonnaise - 2 tablespoons
- apple cider vinegar - 1 tablespoon
Steps
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Add the rinsed jackfruit to the skillet and use a fork to shred it into smaller pieces.
- Stir in the smoked paprika, ground cumin, black pepper, and salt. Mix well to coat the jackfruit with the spices.
- Pour in the BBQ sauce and water, stirring to combine. Reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally, until the jackfruit is tender and well coated with sauce.
- While the jackfruit is cooking, prepare the coleslaw by mixing the coleslaw mix with vegan mayonnaise and apple cider vinegar in a bowl. Set aside.
- Once the jackfruit is done, toast the burger buns if desired. Assemble the sandwiches by placing a generous portion of the BBQ pulled jackfruit on the bottom half of each bun and topping it with coleslaw.
