- Chicken breast - 500 grams
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Sugar-free BBQ sauce - 120 ml
- Apple cider vinegar - 1 tablespoon
- Chicken broth - 120 ml
Steps
- Preheat your slow cooker or a heavy pot over medium heat.
- In a bowl, combine garlic powder, onion powder, smoked paprika, ground cumin, salt, and black pepper.
- Rub the spice mixture all over the chicken breasts.
- Heat olive oil in the pot, then sear the chicken breasts for 2-3 minutes on each side until browned.
- Remove the chicken from the pot and set aside.
- In the same pot, add the chicken broth and apple cider vinegar, scraping up any browned bits from the bottom.
- Return the chicken to the pot, cover, and cook on low heat for about 45 minutes or until the chicken is tender and easily shredded.
- Remove the chicken from the pot and shred it with two forks.
- Stir the sugar-free BBQ sauce into the shredded chicken, mixing well to combine.
- Serve warm, optionally with extra BBQ sauce on top.
