Ingredients

  • Chicken breast - 500 grams
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sugar-free BBQ sauce - 120 ml
  • Apple cider vinegar - 1 tablespoon
  • Chicken broth - 120 ml

Steps

  1. Preheat your slow cooker or a heavy pot over medium heat.
  2. In a bowl, combine garlic powder, onion powder, smoked paprika, ground cumin, salt, and black pepper.
  3. Rub the spice mixture all over the chicken breasts.
  4. Heat olive oil in the pot, then sear the chicken breasts for 2-3 minutes on each side until browned.
  5. Remove the chicken from the pot and set aside.
  6. In the same pot, add the chicken broth and apple cider vinegar, scraping up any browned bits from the bottom.
  7. Return the chicken to the pot, cover, and cook on low heat for about 45 minutes or until the chicken is tender and easily shredded.
  8. Remove the chicken from the pot and shred it with two forks.
  9. Stir the sugar-free BBQ sauce into the shredded chicken, mixing well to combine.
  10. Serve warm, optionally with extra BBQ sauce on top.
