Ingredients

  • Beef chuck roast - 400 grams
  • BBQ sauce - 100 ml
  • Tortilla chips - 150 grams
  • Shredded cheddar cheese - 100 grams
  • Sour cream - 50 grams
  • Pickled jalapeños - 30 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic, cumin, paprika, salt, and black pepper to the skillet, stirring for another minute until fragrant.
  4. Season the beef chuck roast with salt and pepper, then add it to the skillet, browning on all sides for about 10 minutes.
  5. Transfer the beef to a slow cooker, pour in the BBQ sauce, and cover. Cook on low for 6-8 hours or high for 4 hours until the beef is tender and easily shredded.
  6. Once cooked, shred the beef using two forks and mix it with the sauce in the slow cooker.
  7. On a baking sheet, layer half of the tortilla chips, top with half of the pulled beef, and sprinkle half of the shredded cheddar cheese.
  8. Repeat the layers with the remaining tortilla chips, beef, and cheese.
  9. Bake in the preheated oven for 10-15 minutes until the cheese is melted and bubbly.
  10. Remove from the oven and top with sour cream, pickled jalapeños, and fresh cilantro before serving.
