Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • BBQ sauce - 4 tablespoons
  • Whole grain buns - 2
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Red onion - 1/4, thinly sliced
  • Lettuce leaves - 2
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, mix the olive oil, BBQ sauce, salt, and black pepper.
  3. Remove the stems from the portobello mushrooms and gently wipe them with a damp cloth.
  4. Brush both sides of the portobello mushrooms with the BBQ marinade and let them sit for 10 minutes.
  5. Place the marinated portobello mushrooms on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  6. While the mushrooms are grilling, lightly toast the whole grain buns on the grill.
  7. Assemble the burgers by placing a grilled portobello mushroom on the bottom half of each bun.
  8. Top each mushroom with sliced avocado, tomato, red onion, and a lettuce leaf.
  9. Finish with the top half of the bun and serve with additional BBQ sauce if desired.
