- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons
- BBQ sauce - 4 tablespoons
- Whole grain buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Red onion - 1/4, thinly sliced
- Lettuce leaves - 2
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, mix the olive oil, BBQ sauce, salt, and black pepper.
- Remove the stems from the portobello mushrooms and gently wipe them with a damp cloth.
- Brush both sides of the portobello mushrooms with the BBQ marinade and let them sit for 10 minutes.
- Place the marinated portobello mushrooms on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- While the mushrooms are grilling, lightly toast the whole grain buns on the grill.
- Assemble the burgers by placing a grilled portobello mushroom on the bottom half of each bun.
- Top each mushroom with sliced avocado, tomato, red onion, and a lettuce leaf.
- Finish with the top half of the bun and serve with additional BBQ sauce if desired.
