Ingredients
- Pork tenderloin - 400 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Apple cider vinegar - 1 tablespoon
- Low-carb BBQ sauce - 1/4 cup
- Fresh parsley - for garnish
Steps
- In a small bowl, mix together the olive oil, garlic powder, smoked paprika, cayenne pepper, salt, black pepper, and apple cider vinegar to create a marinade.
- Place the pork tenderloin in a resealable plastic bag and pour the marinade over it, ensuring it is well coated. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
- Preheat your grill to medium-high heat.
- Remove the pork tenderloin from the marinade and discard the marinade. Place the tenderloin on the grill and cook for about 20-25 minutes, turning occasionally until the internal temperature reaches 63°C (145°F).
- During the last 5 minutes of grilling, brush the low-carb BBQ sauce over the pork, allowing it to caramelize slightly.
- Remove the tenderloin from the grill and let it rest for 5 minutes before slicing.
- Slice the pork tenderloin into medallions, serve with additional BBQ sauce if desired, and garnish with fresh parsley.
