Ingredients

  • Pork tenderloin - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Apple cider vinegar - 1 tablespoon
  • Low-carb BBQ sauce - 1/4 cup
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, mix together the olive oil, garlic powder, smoked paprika, cayenne pepper, salt, black pepper, and apple cider vinegar to create a marinade.
  2. Place the pork tenderloin in a resealable plastic bag and pour the marinade over it, ensuring it is well coated. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill to medium-high heat.
  4. Remove the pork tenderloin from the marinade and discard the marinade. Place the tenderloin on the grill and cook for about 20-25 minutes, turning occasionally until the internal temperature reaches 63°C (145°F).
  5. During the last 5 minutes of grilling, brush the low-carb BBQ sauce over the pork, allowing it to caramelize slightly.
  6. Remove the tenderloin from the grill and let it rest for 5 minutes before slicing.
  7. Slice the pork tenderloin into medallions, serve with additional BBQ sauce if desired, and garnish with fresh parsley.
