Ingredients

  • Pork shoulder - 400 grams
  • BBQ sauce - 100 grams
  • Gluten-free tortillas - 4 pieces
  • Red cabbage - 100 grams, shredded
  • Fresh cilantro - 20 grams, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon

Steps

  1. Preheat your oven to 150°C (300°F).
  2. Rub the pork shoulder with olive oil, salt, black pepper, garlic powder, and onion powder.
  3. Place the seasoned pork shoulder in a baking dish and cover it tightly with aluminum foil.
  4. Bake in the preheated oven for about 3 hours, or until the pork is tender and easily shreds with a fork.
  5. Once cooked, remove the pork from the oven and let it rest for 15 minutes before shredding it with two forks.
  6. Mix the shredded pork with BBQ sauce until well coated.
  7. In a separate bowl, combine the shredded red cabbage, chopped cilantro, and lime juice. Toss to mix well.
  8. Warm the gluten-free tortillas in a dry skillet over medium heat for about 30 seconds on each side.
